Apple Crisp is one of those never-fail vintage recipes that are mainstays of our great-grandma’s kitchens. These time of year, we are transitioning from the last of the cold-storage apples from last year to fresh new apricots ripening on the trees. The apples are looking a little bit worse for wear in our fruit room with wrinkling skin and getting soft and mealy. Don’t throw those away, though! Just make good-old Apple Crisp! Your family will love it. Today, I used Golden Delicious but you could use almost any common types of apple.
Be sure to check that your oats are labeled gluten free when you are baking. Many oats that are not specifically processed to be gluten-free may be cross-contaminated with gluten from the processing mill or facility.
Apple Crisp Ingredients:
- Apples (approx. 6 medium)
- 3/4 C. Brown Rice flour
- 3/4 C. Tapioca flour
- 2 1/2 C. Rolled GF Oats
- 1 C. Brown Sugar (packed)
- 2 tsp. Cinnamon
- 1/2 tsp. Ginger
- 1 tsp. Cardamom (optional)
- 1 C. Butter or dairy-free “butter” (softened)
Preheat oven to 350 degrees. Add all ingredients into a mixing bowl and use a pastry cutter or a mixer to add it all together until crumbly.
Peel and slice apples into a 9×13 inch pan until the whole bottom of the pan is nicely covered with apple slices.
Add the crumble all over the top of the apples evenly.
Bake for approx. 1/2 hour or until the apples are soft when poked with a fork. Let cool slightly and serve warm with 1/2 and 1/2, whipped cream, or vanilla ice cream, or even some caramel sauce drizzled over the top. I don’t know if raisins would taste ok in this. If you try it, let me know if it worked. Store extras in the fridge- haha, like there will be any leftovers! Maybe some for breakfast– don’t tell your kids I said that!
