Easy Gluten Free Toffee Almond Butter Cookies

Just like our snickerdoodle cookies, these delicious toffee almond butter cookies are chewy and ready to serve with “milk” for that sweet attack. This is an adaptation of a peanut butter cookie recipe from a friend, crowd pleasing cookies are super easy to put together and require no flour at all. Flatten a bit more and they are ready to use as ice cream sandwich cookies. Crumble them up and they make wonderful ice ream topper. A drizzle of chocolate on top would be an excellent addition as well. Let’s get to it!

  • Almond Butter
  • Light Brown Sugar
  • Egg or aquafaba*
  • Baking Soda
  • Vanilla Extract or 2 tsp. Vanilla + 1 tsp. Rum Extract
  • Toffee bars (Heath or Skor)

*Aquafaba is the thick slimy packing liquid in light colored canned beans such as white beans or garbanzo. If you need to avoid eggs, aquafaba is a great option in certain baked items.

Easy Assembly

The joy of these cookies? Just chop toffee bars into large chunks. Throw everything into a mixer bowl and mix well. Scoop onto a baking sheet and BOOM, they’re in the oven!

Soft and chewy, these flourless toffee almond butter cookies are gluten free and oh-so-delicious.

Ingredients

  • 1 C. Almond Butter

  • 1 C. Light Brown Sugar

  • 1 Egg or 3 Tbs. aquafaba

  • 1 t. Baking Soda

  • 1 Tbs. Vanilla Extract or 2 tsp. vanilla + 1 tsp. Rum extract

  • 2 Toffee bars (Heath or Skor)

Directions

  • Preheat oven to 350 degrees.
  • Chop toffee bars into large chunks.
  • Add all ingredients to a mixer and mix well.
  • Scoop dough in generous rounded tablespoon size. Form into ball and place on cookie sheet with space between.
  • Bake for approx. 8 minutes until set. Remove from oven and allow to cool on pan for a few minutes before removing.
  • Store leftovers in the refrigerator or freeze in airtight container for later.
